Pistachio Crusted Chicken with Strawberry Salsa I am so ready for spring recipes that are light and fruit forward with fresh herbs, yet satisfying! This recipe takes thin and tender chicken breasts and coats them in ground pistachios and breadcrumbs before oven baking to golden brown goodness. The strawberry salsa ties the whole recipe together with fresh basil and tangy lime juice. Recipe below👇🏼 . . . 2 large boneless skinless chicken breasts 2 eggs 1/2 cup raw unsalted pistachio pieces 1/2 cup breadcrumbs 1/4 tsp garlic powder 1/2 tsp sea salt For Strawberry Salsa 1 cup chopped strawberries 1/2 cup chopped red onion 1/4 cup chopped cilantro 1/4 cup chopped basil 1/8 tsp sea salt . . . Stir together ingredients for salsa and refrigerate until serving. Preheat oven to 400F and line a large baking sheet with parchment paper. Slice chicken breasts lengthwise through the side to create 4 pieces. Cover chicken with parchment paper and pound thinly using a heavy pan or meat mallet. Set aside. Place pistachios in a food processor and pulse until fine. Stir together breadcrumbs and ground pistachios in a medium shallow bowl with garlic powder and sea salt. Beat eggs in a separate shallow bowl. Dunk each slice of chicken in egg and shake off excess. Dredge in pistachio mixture to coat and place on prepared baking sheet. Bake 15 minutes. Turn chicken and bake an additional 10-15 minutes, until pistachio crust is golden and chicken is cooked through. Serve hot topped with strawberry salsa.
