‘Tis the season for staying in, prepping that Netflix queue and bundling up in blankets. And a delicious bowl of chili is the perfect meal for all of the above. Thankfully this comfort food staple doesn’t have to throw a wrench in your healthy eating habits or fall meal prepping—there are still plenty of protein-packed options that won’t have us needing a post-meal nap. The drizzliest of weather over here & I’m not complaining??Made a big batch of this veggie loaded chili yesterday: 1 15oz can each of black beans, white beans & kidney beans, all rinsed & drained 1 28oz can crushed tomatoes 1 can corn, rinsed & drained 1 tbsp tomato paste 2 cups veggie broth 1 medium yellow onion, diced 3 cloves garlic, minced 3 celery stalks, diced 2 large carrots, diced 1/2 bell pepper, diced 1.5 tbsp chili powder 1.5 tsp cumin 1 tsp turmeric 1 tsp dried oregano 1 tsp salt 1 tsp pepper 3 cups chopped Dino kale 2-3 squares dark chocolate How: 1. Heat a large pot over medium heat. Sauté onion, carrot, pepper & celery for 2-3 min in olive oil. Add in garlic and cook for another 30 seconds. Add in all seasonings + tomato paste & cook for another 2 minutes. 3. Add in crushed tomato & broth. Let simmer for 15 min or until carrot & celery are soft. 4. Pour in drained beans, corn, and chocolate. Taste & add more of any seasonings taste. Let simmer for another 5-10 min. 5. Stir in kale & serve! Topped mine w/ avo, @miyokoscreamery cashew cream cheese, cilantro & @sietefoods tortilla chips.

3. Clean Eating Turkey Chili 

This protein-packed turkey chili can be made on the stovetop or with a slow cooker. Top it off with some Greek yogurt, avocado and fresh jalapeños for an extra kick. Get the recipe here.

4. Sweet Potato Chicken Chili

Sweet potato ? chicken ? chili ?!!! I love using my crockpot when the weather gets chilly!! Ingredients 1 cup chopped sweet potato *the smaller chopped sweet potato pieces, the faster they will cook 1/2 diced yellow onion 1 pounds ground chicken 1 can diced tomatoes 1 1/2 cups chicken broth 1 8oz can tomato sauce 2 tablespoons tomato paste 1 diced jalapeno, seeds removed 1 cup diced red pepper 2 tablespoons chili powder 2 teaspoons cumin 1/2 teaspoon garlic 1 teaspoon salt Instructions To ensure meal comes together in 20 minutes, it is highly advised to chop the sweet potatoes and dice the yellow onion beforehand and store in the refrigerator until ready. These elements can be stored 2-3 days Heat a large pan over medium-high and add the ground chicken, chopped sweet potato, and diced onion Break up the ground chicken and brown for 5-7 minutes, until fully cooked As chicken is browning add the can of diced tomatoes, chicken broth, tomato sauce, tomato paste, diced jalapeño, diced red pepper, and spices to a medium pot. Bring to a boil over high heat Once ground chicken has cooked throughout, add to the pot of liquid and turn heat down slightly to a rolling simmer. This White Bean Chicken Chili is the one of two slow-cooker recipes I make, and will carry you all the way through Fall and Winter. It’s creamy with no cream, gives you a little kick in the pants thanks to hatch chili’s, has just the right amount of smokiness and makes the best leftovers! We made it back from our DC trip, so I’m cooking this up today in between loads of laundry and making phone calls to contractors for the house! I can’t believe it’s practically October, and we still haven’t washed our windows from pollen season, which ended in June ? love that I can get some necessary work done and this low-maintenance, healthy, cozy, flavorful meal will be ready for dinner for my family!

My Verde Turkey Chili has been a fan fave on the blog since I first posted it in 2014. Crock-Pot Verde Turkey Chili yields 4-6 servings Ingredients: 1 lb. ground turkey 1 can white navy beans 1 package frozen bell peppers 2 (12-16 oz) jars of verde salsa, I use Trader Joe’s 1 tsp. cumin 1 tsp. chili powder Topping ideas: Fritos, plantain chips, cheese, avocado, sour cream, greek yogurt, lime and cilantro Directions: Cook your turkey meat in a non-stick pan. Once your turkey is cooked through, strain it. Next, strain your beans. In your Crock-Pot, add the cooked turkey meat, drained beans, frozen veggies, salsa and seasonings. Stir to combine. Set your Crock-Pot to cook 4-5 hours or high or cook 6-7 hours on low. Taste the chili and add more cumin and chili powder if necessary. Top with your choice of toppings. Fritos and chili go hand in hand for me, but I love swapping the highly addicting (and my favorite chip) for a healthier option like plantain chips.

Growing up, my mom would make soup every Sunday in the winter for “Soup-er” Sunday ? I broke tradition a bit and made this chili on a Saturday ? but if I’m eating it again today it still counts, right? @rachaelsgoodeats Hearty Paleo Chili did not disappoint! It was easy and delicious. You can find it on her blog, but I also copied and pasted it below. I topped mine with some avocado, grain-free tortilla chips, and hemp seeds. ? Hope you all have a Soup-er Sunday! Ingredients * 2 tbsp olive oil or avocado oil * 1/2 red onion, diced * 1 lb organic ground turkey * 1 15 oz can fire roasted tomatoes * 1 15 oz can tomato sauce * 1/2 cup bone broth * 1 medium sweet potato, peeled and cubed * 1 can chopped green beans * 1 red bell pepper, diced * 1/2 tsp chili powder * 1/2 tsp cumin * 1/2 tsp oregano * 1/4 tsp garlic powder * 1/4 tsp paprika * 1/4 tsp red chili flakes Instructions 1. Cut up and sauté the diced onion in oil until caramelized. 2. Add in ground turkey to brown, along with all spices.  3. Pour in crushed tomatoes, tomato sauce, and bone broth. Stir altogether. 4. Cover and let simmer on low-medium heat for 25 minutes. 5. Add in chopped and peeled sweet potato, cover with lid and cook for an additional 10 minutes. 6.  Add green beans & bell pepper and heat for 5-10 additional minutes 7. Serve! Top with avocado, nutritional yeast or organic cheese & chives.
